Canning with love at Kristi’s Kitchen

Kristi Edmonsond, of Kristi’s Kitchen, got her start by learning to can from her extended family in the mountains of North Carolina in 1986.  As well as being accomplished in canning, Kristi enjoys all aspects of cooking and catering.

Local fruits and vegetables are used when available.  Most of the ingredients in her products are cut up by hand, not using machines.  The jellies and jams are processed in a hot water bath to complete the process.  Kristi and Tom have worked several farmers’ markets including Farm Stand at Petrol Station.  We have been well received by the neighborhood and have many repeat customers.

The signature product is Texas Pepper Jelly.  Is it hot or is it not?  It’s a great blend of sweet and “sweet hot” peppers.   As a jelly, it’s delicious on toast, English muffin, biscuits, and bagels.  One of the favored uses is as a hors d’oeuvre.  Pour the jelly over a block of Philadelphia Cream Cheese and serve with crackers.  Instant hors d’oeuvre!  Recently, a customer suggested adding the Pepper Jelly to plain Greek yogurt.  Now you have flavored yogurt.  It works wonderfully as well as a glaze on chicken or pork (great on ribs)!

Some of the other popular flavors of jellies and jams are: Carrot Cake Jam, Texas Blueberry Buckle, Texas Red Hot Raspberry, Texas Firecracker Cranberry, Sundae in a Jar, Mango Fandango, Simply Strawberry, and many others. Other savory products that are popular are Spicy Bread and Butter Pickles, Pickled Asparagus, Corn Relish, Dilly Beans, and Peach Mango Salsa.
Most importantly is these delectable items are made with love!
Did You Know?

How much water do vegetables need when growing?  A good general guideline is an inch of water per week, either by rain or watering; in arid climates, it is double that. In hot weather, vegetables need even more water, up to about ½ inch per week extra for every 10 degrees that the average temperature is above 60 degrees.
