Texas T Kobe Beef

Gene and Michelle Terry, owners of Texas T Kobe LLC.,  offer retail and wholesale American Kobe Style Beef locally produced and owned west of Houston in Wallis, Texas.  They have been in the ranching industry for over 30 years and provide an excellent product.  You can find them this Saturday at Farmers Market at Imperial.

What distinguishes Kobe Beef is the meat's extensive marbling, tenderness and taste. While American Beef is rated on the USDA scale of Select,Choice and Prime, Kobe Beef requires it's own category as it starts ABOVE Prime.

Texas T Kobe's Wagyu Beef is quality grass and grain fed without the use of hormones or antibiotics. It can increase HDL (good cholesterol) and is an effective source of Essential Fatty Acids such as Omega 3 & 6. Enjoy the "melt in your mouth" texture while making health a priority. You will never look at beef the same way again!

Please see their web site for Health and Nutritional information at: www.texastkobe.com. Gene and Michelle take pride in providing a naturally produced Prime Beef that is good for you. Texas T Kobe Beef is also being served at several locations in Houston such as Under Bellies, Sparrow, Roots Bistro, Canopies and Rays Grill.  You can always find them at Farmers Market at Imperial, so you can bring the best to your dinner table too.
Did You Know?

In 1974, there were fewer than 100 farmers' markets in the nation. Now the USDA lists 2,400 farmers' markets in its most recent (1996) directory—up 40% from the 1994 directory.

Grilled Watermelon Salad from Chef Hugo Ortega
When shopping for ingredients, consider your local farmers market vendors for good pork, shrimp, eggs, chicken and a range of fresh produce!

Ingredients:

  • 1 mini seedless watermelon
  • olive oil for brushing
  • 2 cups mache greens
  • 2 cups watercress
  • 1 cup purslane
  • ¼ cup celery leaves
  • ¼ cup parsley leaves
  • ¼ cup cilantro leaves
  • 1 tablespoon lime juice
  • pinch of salt
  • 2 avocados
  • grapefruit dressing
Optional Garnishes
  • ¼ cup thinly sliced heart of palm
  • edible flowers
  • root vegetable chips
Grapefruit Dressing
  • ½ cup fresh grapefruit juice
  • 2 strawberries
  • ½ ounce lime juice
  • 1 tablespoon champagne vinegar
  • salt to taste
  • ½ cup olive oil
To Prepare
Peel watermelon and cut into squares approximately 1½ by 1½ inches. Preheat a skillet over high heat. Brush watermelon lightly with olive oil and place in skillet and cook 30 seconds each side. The watermelon should remain firm but brown slightly. Remove from pan and let cool.

Place all greens in a bowl and add lime juice and pinch of salt and toss the greens evenly. Peel avocados, remove seed, cut each half into four pieces and set aside.

To arrange salad place 1 ounce of grapefruit dressing in the center of the plate and make a circle. Around that circle place three or four grilled watermelon squares alternating with one piece of avocado. Place equal amount of salad in the center of each plate, garnish with edible flowers, hearts of palm and root vegetable chips.

Grapefruit Dressing

Place all ingredients except olive oil in a blender and blend until incorporated. While the blender is still on slowly add the oil in a steady stream and season to taste. Good in refrigerator for up to 5 days.
