Halloween Fun at the Market!
For our last outdoor market, we will be planning to have some fun Halloween activities for the kiddos (of all ages) trick or treating, pumpkin painting, and much more. Be sure to come to the market dressed in your costumes!

Not only do you have the delicious end of summer veggies, but also the fall-time crops coming in full force. This is a great time to freeze, preserve, and take stock for winter. The Apple Trailer is Back! Come pick; Honeycrisp, ginger Golds, Cortland, Macon, Empire, Mac, Pumpkins, gourds, butternut squash, acorn squash, spaghetti squash.
We have lots of meats available this Sunday too. Goat meat. We will also have Beef, Pork, and Chicken. Whole Chickens are $15, Chicken Wings and Drumsticks are $2.50/lb and Thighs will be $4.00/lb.
ECHO CREEK FARM:
We will be picking like crazy before the big freeze! Lots of fresh Zucchini, Sweet Red and Yellow and Orange Peppers will be available along with Cabbage, Broccoli, Blue Lake Green Beans,Cauliflower, Kale and Red Potatoes. All varieties of Winter Squash along with Spaghetti squash and 1/2 peck bags of Macintosh and Empire Apples will also fill our tables.

Echo Creek Farm will be bringing Winter squashes such as spaghetti, delicata, acorn, buttercup, sweet dumpling, pie pumpkins, and more, lots of Greens such as spinach, arugula, three kinds of kale dinosaur, red Russian, and blue curled, mixed lettuce, Swiss chard and head lettuce. Plus hakurei turnips with greens. Also, cabbage, Napa cabbage, red beets, carrots, potatoes white, red and all purple, cherry Tomatoes and heirloom and slicing tomatoes, yellow onions, sweet onions, shallots, and leeks, sweet peppers of varying colors, hot peppers such as jalapeños, hungarian hot wax, and habanero, garlic, kohlrabi, red radishes, and zucchini and summer squash plus more!

We also sell pints of quarts of most of our meats. If you are not going to enjoy them right away they do freeze beautifully. That way you can enjoy them all winter!
If it's too cold to stick around and eat at one of the picnic tables we'll wrap your meal to go.
Our latest addition of spicy smoked wings have been a big hit so we'll be preparing plenty.
It's October so why not try a delicious smoked bratwurst with kraut?
And then there were 2! Backstretch Barbeque has just 2 Sundays left until the 2016 outdoor market. We've had a great summer and made a lot of new friends.
Even though it's going to be cold this weekend we'll be there with our smokers and lots of great BBQ.
This week's chili will be a white chicken chili.
As always, we'll have those delicious Scotch Eggs and our award-winning pulled pork.

Penne Pasta with Kale Pesto and Butternut Squash
By: Mary of Healthy Gourmet Kitchen
1 lb Penne Pasta (organic or imported from Europe)
2 lb butternut squash
1/2 jar Healthy Gourmet Kitchen Kale Pesto
1 tablespoon olive oil
Salt and pepper (optional)
Wash and peel butternut squash.
Preheat oven to 350 F.
Cut butternut squash into chunks about 1 inch by 1 inch.
Lightly oil 2 cooking sheets using 1/2 tablespoon of the olive oil, use the other half tablespoon of oil to lightly coat the butternut squash. Spread the butternut squash on the two cooking sheets leaving space between the cubes. Season the squash with salt and pepper to taste.
Roast at 350f for 30 - 40 minutes.
Meanwhile bring a pot of water to boil. Cook the penne pasta according to directions, check to see if pasta is done 3 minutes before package cooking time. Pasta should be cooked al dente ('firm to the bite'), it's not meant to be soft. Pasta cooked al dente has a low glycemic index, overcooking pasta boosts the GI.
Scoop half a jar kale pesto into bowl intended for pasta.
When pasta has completed cooking, drain but do not rinse! Save up to 1/2 cup of the cooking water if necessary to add a little bit at a time to sauce to make the sauce adhere better to the pasta.
Add drained pasta to bowl with pesto and toss. Place serving on plate (one cup pasta) and add roasted butternut squash and gently toss.
Serve warm with optional freshly grated Parmesan cheese.
