Lemon-Cream Layer Cake
Here's a summer cake for those days when it's just too hot to turn on the oven. Recruit the kids - building this "tower" is more fun than legos - and tasty too. The hardest part is waiting - it needs to sit overnight in the fridge for all the flavors to meld. The next day, the wafer cookies will be soft enough to slice, just like a cake.
Instead of using the traditional whipped cream filling, we blended our lactose-free cream cheese and sour cream, then flavored it with lemon curd and fresh lemon juice.You'll find this recipe, and lots of other great lactose-free recipes here.
