Dear Awesome and Loyal Customers,

Curtis and I wanted to take a minute to thank each and every one of you for your continued support of Council Brewing this past year. As we reflect on 2015 and look forward to 2016, we are even more aware of how much our community means to us. We are dedicating this next year to do more to give back to you by hosting charity nights, giving back to the industry peers, and to continue to provide valuable education to the craft beer drinker.

Presentation on Oak Aging Basics - Jan. 13th

Education and sharing knowledge is a big part of what Council Brewing is all about. We welcome the community to join us each month in our tasting room for Beer Education Night. The second Wednesday of each month, we will cover a different topic related to the beer making process, brewery management, or our personal experience here at Council. 

Wednesday, Jan. 13th, 2016 from 6pm-7pm Jeff Crane, Barrel Program Director, will be discussing the differences in toast levels of oak, as well as American oak versus French Oak. You will learn about the impact that various types of oak has on a beer's flavor as well as techniques that can be applied on a homebrew level, as well as designing recipes using oak as an ingredient. 

The Beer Education Night Flight of five tasters includes: our Belgian Tripel with four different oak treatments and the Tripel as a control: American Light Toast, American Medium + Toast, French Light Toast, and French Medium + Toast.
We will begin pouring flights at 5:30pm, so come early to get your seat. Jeff will begin the presentation at 6pm. We hope to see you there! RSVP to the Facebook event or the Google form.

First Industry Night of 2016 – Jan. 18th 

Cheers to our fellow craft beer industry folks!

Starting in January 2016, we will be hosting an Industry Night every third Monday of the month. Whether you work in a craft beer centric bar or restaurant, bottle shop, brewery or tasting room, we invite you to stop by Council and enjoy our Industry discount (25% off draft beer) from 2-9pm

Cask Night – Clodhopper ESB Dry Hopped

You're invited to Council Brewing the fourth Wednesday of each month for a special cask. Our Tasting Room hours on Wednesday's are 2-9pm and we will be tapping the CASK at 4:30pm on Jan. 27th. Our first Cask Night of 2016 will feature, the Clodhopper ESB (Extra Special Bitter) Dry Hopped. This traditional English Pale Ale is intended to be served at lower carbonation and cellar temperature for a smooth and enjoyable drinking experience, emphasizing the nutty aroma and caramel malt flavors. 

New Year, New Opportunities

We are looking for an enthusiastic and dedicated individual to join our Council Crew in the Tasting Room. The ideal candidate is passionate about craft beer, excited to work in the industry, ambitious to grow with a company long term,
hardworking, eager to learn, and detail oriented. They will have experience in customer service, bartending, and a friendly and cheerful disposition. If this is you, please don't hesitate to apply.

Upcoming Bottle Releases

Beatitude Tart Saison
We’ve added two new variants to the Beatitude Series, Prickly Pear and Citra Dry Hopped. The first to be released will be Citra Dry Hopped on Monday January 11th in the CBC Tasting Room, as well as for distribution throughout San Diego County. Watch out for that Prickly Pear though, you can’t miss it with the neon magenta color. Stay tuned for more release details and dates.

Ephesus Barrel Aged Golden Sour - (Eff-e-sus)
In early 2016, we will be releasing Ephesus, a Golden Sour aged in oak barrels for over a year. Fermented with house cultures, this beer has a rich gold color, notes of peach and ripe pear, hints of vanilla honey and a tangy sour punch. Currently bottle conditioning. Official release date TBA.
