Council Brewing Co is Operational!

San Diego Beer Week is right around the corner and we are excited to participate in our first SDBW. We've lined up 8 events for the 10 day long celebration of San Diego Craft Beer. We will be offering a special SDBW pub glass that you can purchase which includes the first fill for $8 - bring it back for $1 off all pint refills during Beer Week!* We'll kick off Beer Week with Nicene Farmhouse Saison back on draught, continue the party with specialty IPA's, BBA Quad, Cask Night, Ice Cream Floats, Tart Saison Growler fills, and end with the bottle release of Athanasian - BBA Tripel! Athanasian - BBA Tripel
Our second bottle release to come out of our Barrel Program is Athanasian - a Belgian Tripel aged for 4 months in Buffalo Trace Bourbon Barrels. You may purchase up to (2) bottles of Athanasian beginning on Tuesday, October 28, 2014 at 2pm. Bottles will be sold via Brown Paper Tickets (click this link). This is an extremely limited release of only 350 Bottles. Athanasian Tripel derives much of its subtle fruity notes from the distinctive yeast strain and has layered complexity of honey, vanilla, and caramel from fermentation and aging in Bourbon barrels. Bottle conditioned with Brettanomyces, corked and capped for earthy, stone fruit notes with extended aging.

Halloween Party

Join us for our first Halloween Party on Friday October 31! We'll have a cask of Royal Blood on our Beer Engine with some intense Centennial dry-hops! Come in costume!

Barrel Program

We currently have 16 barrels filled with beer for aging including Pirate's Breakfast, Flanders Red, Flanders Brown (Oud Bruin), Biere de Mars, and a couple house sour experimentals. Bourbon Barrel Aged Pirate's Breakfast will be our next bottle release, currently planned for January 2015 and the Biere de Mars for March 2015.  

Sour Program

If you haven't been in to Council's Tasting Room lately, you'll be excited to know that we have two variations of our Tart Saison on tap at all times now! We rotate through variations such as Mango, Peach, Pineapple, Blueberry, and Dry-Hopped! We've got a few more fun flavors planned for Beer Week too! 

We've been quietly working on some cool new sours that we'll start releasing over the next couple months including one that is a first of its kind. Stay tuned for details!
