Kym's advice for day thirteen:

As mediator of Sydney Vegan FB group forum which has over 4,000 members, I can tell you that most vegans find that they GP is at the least sceptical and at worst downright against a vegan diet. Whether this is because a medical degree in Australia only covers a minimal level of nutrition, or they simply harbour the same dominant paradigm as the average person uneducated about plant-based diets, it can be quiet frustrating if you visit your GP and they blame any health issues on a diet that science is proving to be the healthiest possible diet for humans to have. Studies are emerging from all over the world showing the amazing healing properties of plants to protect us from cancer and provide all of our nutritional needs without the saturated fats, toxins and other nasties.

We can all help to raise awareness of the developments of nutritional science and a vegan diet as a healthy option.
TODAYS ASSIGNMENT:
Please print out pages 35 and 55 of this booklet, highlight the important parts regarding a vegan diet, and next time you visit your GP, if they have any issues with a vegan diet, give them a copy of it.

Vegucate yourself with some vegan documentaries!

TODAY'S ASSIGNMENT:
Check out some trailers, synopsis and reviews for these films, either just be searching on youtube, or try these links here here and here. Some of these films like Earthlings have a high level of animal cruelty, so be wary of what you are willing to witness and what you are comfortable with watching. Others such as Forks Over Knives or Live And Let Live contain no animal cruelty scenes at all. Forks Over Knives can be purchased at JB Hifi. Order others online via www.urbangypsyaustralia.com or Amazon. Avoid watching films through pirated video sites as its unethical and doesn't help to support the filmmakers, and we really need them to be able to make more films and fund their impor work :-)

Cassies' recipe idea for day thirteen:

Makes 4 serves
Ingredients
3 brown onion, thinly sliced
3 cloves garlic, minced
1 small fennel bulb, thinly sliced
1 medium potato, roughly chopped
2 sticks celery, finely diced
2 tsp fresh thyme, roughly chopped
2 sprigs mint, roughly chopped
½ tsp cracked black pepper
375ml vegetable stock
875ml water
2 cups frozen peas
1 tbsp salt
125ml coconut cream
Juice of 1 lemon
- Place the onion, garlic, fennel, potato, celery, thyme, mint, pepper, stock and water into a 4 litre pot and allow to simmer over a low heat for 30 minutes.
- Add the peas and salt and allow to simmer for a further 2 minutes. Stir through the cream and blend until smooth, using a stick mixer.
- Serve with a squeeze of fresh lemon juice.
