Kym's advice for day nine:
Connect with other like-minded people and make some new vegan friends!
So you've made it through your first week being vegan. You've learnt a lot, watched some videos, digested a lot of info and ingested some amazing new flavours. In writing this thirty day vegan course we are trying to give you as much encouragement as possible, as we are passionate vegans who hope to rid the world of animal suffering. But we can only do so much via emails, so we highly recommend that you get along to a meetup and connect with other like-minded people. Don't worry if you are a shy person, cos guess what? Vegans are amongst the nicest sweetest people on earth - not surprising since that since we care for non-human animals, we are also caring and considerate to human animals... some of us are even party animals! :-)

TODAY'S ASSIGNMENT: 
Look on www.vegact.org.au/events, choose an event that you'd like to attend and RSVP.  This way you can get some real face to face encouragement and advice! Vegan groups love having V.I.P.'s (vegans in progress!) at their events, and sharing tips and giving support to those who are following the same path that we have also journeyed.

Cassie's recipe idea for day nine:

Colcannon
Makes 4 serves
Ingredients
60g nuttelex
1 brown onion, thinly sliced
2 cloves garlic, minced
800g potatoes, peeled, diced
¼ cup coconut cream
2 tbsp vegan mayonnaise
2 tsp flaked salt
2 tbsp mint leaves, roughly chopped
2 spring onions, thinly sliced

Directions
1. Place the potatoes into a large pot and cover with cold water. Simmer over a medium heat until just cooked through. Drain, place back into the pot and set aside.
2. In a frypan, heat the nuttelex and saute the onion and garlic until golden brown. Place into the pot with the potatoes along with the coconut cream, mayonnaise, salt, mint and spring onions and mash using a potato masher.
