For the next few weeks, it's tomato canning season. If you are interested in purchasing canning tomatoes, we may be able to help you.  Sign up at our farmstands and we will try to accommodate you as they become available.

Seconds tomatoes or "canning" tomatoes have small bad spots or other imperfections. They are mostly good, and totally delicious. However, they are usually dead ripe and, especially with the heirlooms, must be used within 24 hours from when you pick them up.

A note about signing up for the Autumn CSA. You cannot sign yourself up if you are a current member. If you would like to register, you must email Hana with your desired share size and options. Please use FALL SHARE in the subject line.

The Autumn season runs 8 weeks, from September 25-November 13. You can find the full information about the Autumn shares and options on our website.

If you're not sure if you have registered or not, reply to this email and ask.

Reminder --If you send substitutes in your place, please be sure they know the correct day to pick up and exactly what to get, including how many eggs, flowers, etc. As usual, if you are going to be late, and need us to pack your share, please let us know.

EVERYTHING SHOULD BE STORED IN THE REFRIGERATOR EXCEPT BASIL, GARLIC, AND TOMATOES--EVEN FRESH ONIONS.

BASIL GOES IN A CUP OF WATER ON THE COUNTER, TOMATOES GO ON THE COUNTER. GARLIC GOES IN A COOL, DRY PLACE.

Dust off the canning pot and invest in some freezer bags; it's time.

If you're not into the thought of canning, we have tips and recipes for freezing your tomatoes, which is SO EASY. Don't get intimidated and stop reading. You can can or freeze tomatoes without seasoning to keep them as versatile as possible.

Canning Tips: 
25 pounds of seconds tomatoes typically make about 7-8 quarts of canned whole tomatoes or sauce (that has not been greatly reduced).

My best canning resource is Ball's Blue Book. I got my copy at Wegman's. You can also get most all the canning supplies you'll need at your average grocery or local hardware store. BUT, there is also the Ball Complete Book of Home PreservingFood in JarsPreserving by the Pint and Canning for a New Generation. Many recipes can also be found in this great, comprehensive single post. Canning is not as daunting as it seems, and tomatoes are a great way to begin because of their acidity (there's a low chance for spoilage/contamination) and their versatility. Questions?
