Halfway There...

It's week 8 of 16. We're at the half way point of the Summer season already! It's been a hot week, so we've all been getting started as early as 6:30 am so we can get out of the blazing sun in the late afternoon. The heat wilts us, but the heat-loving plants are starting to go to town -- we're harvesting lots of squash, eggplant is coming along, and the start of tomato season is finally here!

Reminder about vacation season!
If you send substitutes in your place, please be sure they know the correct day to pick up and exactly what to get, including how many eggs, flowers, etc. As usual, if you are going to be late, and need us to pack your share, please let us know.

About Beets...

 

Beets belong to the same family as chard and spinach. Beets are fantastic boiled or roasted and then put over a salad, or grilled (wrap whole beet in foil, drizzle with olive oil, and stick them on the grill or in the oven for about an hour) as a side dish.

Beet greens are a bit earthier in flavor than chard or spinach, but still in the same vein. You can sauté them up with a little olive oil and garlic and serve them over some ravioli. The sweet ricotta balances the earthy really nicely.

Beets are high in folate, manganese, potassium, vitamin C, and iron. Beet greens are high in vitamin C, calcium and iron--more so than the beet root.

Preserving Beets
The most common way to preserve beets is pickling.
If you're a canner, try:
Savory Pickled Beets (My Favorite!)
Sweet Pickled Beets
Cilantro Pickled Beets

If canning's not your thing, try Refrigerator Pickles:
Sweet Pickled Beets
Beet Salad Refrigerator Pickles
Amish Pickled Eggs and Beets

You could ferment them:

You could freeze them:
Roast and Freeze
Boil and Freeze

Or store them:
Root Cellar them
