For the love of Texas Bison and Texas Wine

As a bison rancher that sells grass fed bison meat and also products in the wine industry I just want to share the excitement in the Texas Wine industry about the paring of Texas Bison Meat and Texas Wines. I have worked with many Texas Wineries in supplying bison meat with wine parings for special events. I now am excited to share with Bison Ranchers and Bison Meat Lovers some of the Texas Wines recommended with your favorite Bison Meat recipes.
Wine paring recommended for the Bison Roast recipe below from the National Bison Association Food insert from the July 2015 Bison World magazine is from the Messina Hof Winery in Bryan, and Fredericksburg, TX.

BISON ROAST ~ Delicious Now & Later
Leftover bison roast makes delicious meals fast and easy, including Greek salad and sandwiches.
Bison Roast ~ Ingredients: Ingredients: 4 pound bison roast 1 tablespoon each, salt and pepper 1/2 tablespoon each, garlic and onion powder 3 tablespoons olive oil 1 medium onion, chopped 1 cup dry red wine 1/2 cup bison or beef stock 2 tablespoons white wine vinegar 1/4 cup bison or beef broth.
Directions: • Pat roast dry with paper towels. Combine salt, pepper, garlic and onion powder and rub onto the roast. Place roast in self-seal bag and refrigerate several hours or overnight. • Remove roast from refrigerator at least 30 minutes before cooking. Heat the oven to 350 degrees. • In a 6-quart Dutch oven heat oil on stove top over medium-high heat. Brown roast on all sides. Add on- ion, wine, stock and vinegar to the Dutch oven. • Place browned roast in oven and bake until done, basting occasionally with pan juices. Estimated roasting time: allow 15 minutes per pound for rare, 20 minutes per pound for medium rare to medium. Time is estimated, as conditions, such as opening the oven door, can vary the time needed to bake to desired doneness. The safest option is to use a meat thermometer. Rare to medium rare, remove at 115-125 degrees. Medium rare to medium remove at 125-145 degrees. • When done remove roast to a platter, tent with foil and let rest for 15 to 20 minutes before slicing.

Simple Greek Salad with Bison Roast Ingredients: 1 pound leftover roast bison, cut into small slices 1 head romaine lettuce, rinsed, dried and chopped 1 red onion, thinly sliced 12 cherry tomatoes, cut in half 1 cucumber, sliced 3/4 cup Kalamata olives, pitted 3/4 cup crumbled feta cheese 1/4 cup or to taste Greek salad dressing
Directions: • In a large salad bowl, combine the sliced bison roast, Romaine, onion, olives, tomatoes, cucumber and olives. • Pour dressing over salad, toss and serve.

This holiday season was nothing short of a roller-coaster for folks and bison in the southern plains. We went from Christmas in the 70’s to spring jet-stream collisions and tornadoes, to drifting snow and ice in a period of a week. This kind of stuff really brings into focus the bison-advantage of resilience and durability. Our job, as stewards, is to make the performance of natural behaviors possible. Observing your herd’s behavior in times of environmental extremes can aid you in knowing how to manage for it.
Sales, conferences, shows, gatherings and bison-works are all part of bison-business-as-usual this time of year. This year, we also have federal legislation in motion that recognizes the buffalo-rancher and their herds as integral to bison conservation. Clearly stated in multiple congressional findings, the National Bison Legacy Act [NBLA] sites the rancher of yesteryear, and today, along with tribes, public herds and NGO conservancies as a mosaic of functional conservation of the American bison. Referred to as having ‘sweeping cultural significance’, bison are present in the history and the DNA of every ecological region in America. They are (!) the National Mammal – and everyone knows it. Making it official will only propel the possibilities for furthering their restoration to the American landscape.

The purpose of this letter is to outline the Bison Producers of Alberta Association’s concerns regarding Bill 6 as proposed. The bison industry is classified as the corner-stone of diversified livestock in Alberta, and with nearly 50% of Canada’s bison being raised in Alberta, we are deemed a significant part of agriculture in this province. As a member of the agriculture community, bison producers have a deep commitment to the safety of family members, neighbors, and all others who work with their bison herds. Most all our producers already have coverage (WCB or other) for their workers and follow Farm Safety practices.
