Southern Plains Pointers: December
By: Tim Frasier

Old man winter showed up early for work in the southern plains this year with a historic ice storm. Roads were closed; cattle were huddled up against the fences; pigs, goats and chickens in the barn; dogs and cats living together and declaring armistice inside by the fire, but the buffalo; out in the middle of it all just laid down most of the time and waited for it to pass.  This is what we all know as the bison-advantage and though their resilience to the North American environment is a matter of fact, we still need to pay attention.
Our charge of paying attention to what they have and what they don’t have during a winter blast, is a modern bison - captive reality. This is true whether they are free-roaming on 50 deeded acres or Yellowstone National Park. Do they have water - or some form of it? Do they have feed? Do they have the ability to perform naturally on their own behalves and respond with instinct to the elements? For most herds the answers to the questions asked are answered by throwing out some hay, chopping a little ice and going to the house while the neighbors with cattle, with the help of other neighbors with cattle, are putting in a full day. For other bison herds, none of which are in the southern plains, it involves crews of drovers, helicopters, overtime invoicing and putting in full days driving the bison back to their [captive realty].
Southern plains bison habitats without the benefit of food-plot technologies or perennial winter-grass and sedge diversity, become reliant upon supplemental feed. Average quality hay, with additional protein and energy supplementation can get you through in good shape until the [green-up]. Average quality hay below 8% protein alone, may result in a deterioration of body scores and hardiness through the blue-northern snaps. Body score assessment is the best barometer, therefore; a herd-check on regular intervals is good management.  Always feed on fresh ground as well, for preventing parasite ingestion and other associated health issues.  As for myself, I like strong food-plot preparation, a little hay [just in case], water - whether they have snow or not, and a whole lot of leav’n them alone during the rough weather.  They’ve got it handled and that’s: the ‘Bison-Advantage!’

Wholesale Prices Strong and Steady in November

Wholesale bison prices remained steady in November, continuing a three-year run of young full prices at around 34.90/lb., according to the latest monthly wholesale bison market report released by the USDA;s Grain and Livestock Marketing Service.

Average prices for young bulls in November were $389.03/cwt. In November, which was $0.70/cwt. lower than the previous month, but $0.24/cwt higher than in November 2012. Prices for young heifers averaged $371.72/cwt in November, which were $0.62/cwt. higher than in October, but $3.93 lower than in November 2012.

Old bulls were stronger in the month, while older cows brought slightly lower prices.

In a departure from the traditional pattern for November, 54 percent of the animals processed last month were male. Typically, heifers and older cows account for the majority of bison processed in November. Year-to-date, 55 percent of the bison processed have been bulls.

Bison processing continues to be higher than in the past couple of years. The 43,092 head processed under USDA inspection through the first 49 weeks of 2013, represented an 11 percent increase over 2012.

Bison
  • New Yorkers are nothing if not both interested in fine foods and health-conscious. Enter bison, a lean and delicious meat that we foresee making its way onto more and more menus in 2014. Bison burgers have been on Bareburger's and other burger joints' menus for some time. But there's no reason why the tasty meat can't be used in more high-minded dishes, too. If chefs can do it with venison (like in the venison tartar at Manzanilla), they can do it with bison.

Tree Ranching

Not only are trees lovely to see, they can be an important integral component to your grazing regime. If you're looking for something new this year, try out agroforestry and silvopasture which is simply utilizing trees to extend your land's potential. This can include many things but the basics for this discussion are to use browseable woody species to feed livestock. Trees can tap into moisture and nutrients deep in the ground and maintain high quality edible foliage through drought periods as well as take advantage of the vertical space overhead and provide shade for the soil and livestock.        The best species to use in most of the U.S. are elms, hackberry, willow, boxelder, pecan, honeylocust, blacklocust, acacia, silk tree, mulberry, ash, mesquite and cottonwood.
Tree management techniques include coppicing, pollarding, tree-grassing, intercropping and pleaching. Trees can also be used as living-fence hedgerows and can offer additional value-added long term revenue streams from fruit to lumber for the ranch.
