Here’s a story from The Seattle Times to make you smile:

The pandemic put a pause on many things, including weddings. Bronwen Stevenson ran a Vegas-style wedding ceremony before COVID-19 forced her to close up shop. But as they say, where there’s a will, there’s a way. When Stevenson found out about a shipping container available to rent at the Georgetown Trailer Park Mall, she jumped at the chance to turn it into a tiny chapel. A year later and the tiny chapel has seen over 100 couples get married. Some by an Elvis impersonator, no less. 

I swear this will be my last plug (maybe) offering my services as an ordained minister. But my offer still stands. If any Evergrey reader is looking for someone to officiate their wedding I am more than willing to rise to the occasion and preside over the ceremony. As always, my inbox is always open.

4 things Seattle is talking about

🚢  Does a “green” port really mean anything in the greater fight against climate change? The Port of Seattle just upgraded Terminal 5 with new green infrastructure meant to reduce pollution, but critics point out that in an industry so harmful to the environment these changes mean little. Despite port commissioners’ efforts to be environmentally mindful, the world is simply consuming more, which means more shipping, and which at the end of the day contributes a ton of fossil fuels. (KUOW)

🏡  ICYMI: Seattle’s eviction moratorium was extended once again through September. Mayor Jenny Durkan stated that the three-month extension will allow the city to “provide rental assistance and housing support that is critical to stabilizing the community as we reopen.” Councilmember Kshama Sawant is holding a rally at Cal Anderson on Thursday calling for the moratorium to last through the end of the year. (Capitol Hill Seattle Blog)

➡️  Re-shaping the narrative of a “homeless meth addict.” Two years ago, one of The Seattle Times’ Project Homeless reporters, Scott Greenstone, wrote an article about Becca Uhlrich who was in the midst of a meth addiction and just moved into a tiny house village from the tarp she had been living under. When the article came out, Becca couldn’t finish it, she was embarrassed. Becca was diagnosed with lung cancer and just moved out of her tiny house and in with her son in Arizona, but before she left she wanted to set the record straight. (The Seattle Times)

🍜  Exciting news ’pho’ you. Pho Bac’s new downtown location is now open and they’re getting into the banh mi game. The restaurant is baking bread for the sandwiches onsite and offering specials like a banh mi with meatballs, and salt-cured egg yolks in a tomato broth. (Eater Seattle)

A note from Hattie:

I'm the Seattle Sales Representative for Seattle Cider Company and Two Beers Brewing, and have been with the company for three years. Previously, I was a bartender at a classic cocktail and whiskey bar in Bellevue. I play rugby for Seattle Rugby Club, and in my free time you can find me reading fantasy, watching Lord of the Rings, or quoting Marvel movies. 

If you don't end up making this cocktail, do me a favor and pick up a pack of Seattle Cider Berry Rose or Sparkling Papaya to enjoy during Pride. Proceeds from both will benefit Seattle GSBA and Washington's LGBTQ+ chamber of commerce.

Night at the Rosé

1.5oz Lunazul Reposado (or your choice of tequila)

1oz fresh-squeezed lime juice

1/2oz prickly pear syrup

1/2oz Lillet Rosé 

2 dashes Scrappy’s Firewater Tincture

Combine all ingredients in a shaker and shake with ice for approximately 30 seconds. Pour all contents into a glass with a salted rim, and top with 2 dashes of Scrappy’s Firewater Tincture. Serve with a lime wedge.

To make the prickly pear syrup, combine hot water, sugar, and prickly pear puree in a 1:1:1 ratio and mix together until the sugar is dissolved. If you cannot find prickly pear, pomegranate juice works as well.

Lillet Rosé is a French apéritif that has flavors of berries, orange blossom, and grapefruit. It can be enjoyed all summer either in this cocktail or simply served with tonic, ice, and a lime wedge.
