😋 What Portland’s snacking on

📉 Multnomah County is expected to go “lower risk” today, which is good news for sit-down restaurants. What does this mean? Well, essentially, 65% of the county’s residents have had at least one vaccination shot against COVID-19. Technically we met this requirement a couple weeks ago, submitted an equity plan to the state, and have been waiting for the government’s approval. It also means that restrictions will be loosened again, from KGW: “The lower risk level allows a maximum of 50% capacity indoors at restaurants, theaters, gyms and other indoor entertainment spaces.”

💉 Wanna go shot for shot at Kelly’s Olympian? At least, that’s the plan of local Dr. Maureen Mays, who provided COVID-19 vaccine shots at the downtown bar on Tuesday night and will be doing so again tonight. Mays and her team are partnering with Kelly’s, which is offering a free drink to anyone 21+ who shows up tonight to get their vaccine. Mays told KOIN that she’s not accepting money for her work and called the act “a labor of love.”

🍰 Hey — Kimura Toast Bar has Japanese Basque-style cheesecake now. A few years back, the toast bar’s owners tried a unique kind of cheesecake on a trip to Japan. “Instead of a bottom crust, a golden chewy exterior formed naturally in a hot oven, creating a kind of caramel force field around the interior,” Portland Monthly writes. This planted seeds of inspiration and led to Kayoko Kaye, owner of Kimura Toast Bar and Kayo’s Ramen, creating her own recipe for a Japanese-inspired Basque cheesecake, which is delicate, subtle, and delightfully marshmallowy. 

😋 Black-owned soul food restaurant Everybody Eats PDX is returning to the Pearl with a brick-and-mortar. Portlanders and chef partners Marcell Goss and Johnny Huff Jr. got their start in the PDX food world when they partnered with Damien Lillard’s chef and began cooking for the Trail Blazers. Last year, they fed protesters marching against the police killings of George Floyd and Breonna Taylor. With their new spot and pandemic restrictions loosening, the two will be serving up soul food like “chicken and waffles, lamb chops, and seafood mac ‘n cheese with lobster (both available at dinner), po’ boys, Philly cheesesteaks, and the perfectly fried choice-of-fish baskets,” from Portland Mercury’s excellent write-up

📺 Here’s what it was like being on 'Top Chef' for Portlander Gabriel Pascuzzi. The owner of Mama Bird and Stacked Sandwich sat down with PDX Monthly to talk about his experience on the show and how Portland inspired his cooking. “Oregon has an amazing ecosystem where you can find mushrooms in the forest, go to the coast, pick berries,” he said in the interview. “The gardens that my dad and uncles grew. How in touch I was with food growing up definitely influenced me becoming a chef.”

🤗 Riptz City Eats has a deliciously inspiring backstory. Owner Ron Thomas isn’t just running a restaurant — he’s operating his business as a second-chance employer for unhoused people. Thomas knows what it’s like to be houseless; in the mid 2000s, he was living on the streets of Portland and finding help through nonprofits like Transition Projects, Central City Concern, and Mercy Corps. He was hired on by a second-chance employer, Horn of Africa in Northeast, and honed his skills as a chef by running a small catering business on the weekends. He went on to create Riptz City Wings / Eatz with support from Mercy Corps and Harsch Investments, and you can find him dishing up tastiness and hope at the Canyon Place Shopping Center.

For my family (while not Oregon-related), we usually made a massive trek back to the Upper Peninsula of Michigan to see my grandfolks (Hi Grandma and Grandpa Smith, love you!) and bike around Mackinac Island.

You get pretty used to ice chests full of sandwich fixings and bringing a backpack full of books to read on the way.
