Honey is a sweet, viscous food substance produced by honeybees.  Bees produce honey from the sugary secretions of plants (floral nectar).  The resulting honey gets stored in wax structures called honeycombs. The most common honey worldwide is the kind that is commercially produced for human consumption.  In beekeeping, it has become a common practice to feed them extra sugar in the hopes of making honey earlier in the season and faster than usual.  This practice allows for larger batches but can have some harmful effects on the bees while adulterating the nutritional potency of the final product, especially when heated.  At North American Herb & Spice, honey is obtained from bee colonies set up in the wild instead of domesticated bees, and this nutritional profile is the most ideal for our health.  Several cave paintings in Cuevas de la Araña in Spain depict humans foraging for honey at least 8,000 years ago.  When you try our honey, you are tasting the goodness of ancient wild and raw harvesting methods, an increasingly rare and healthy treat that is hard to find in such a preserved, pure state! When picking out your own honey, you need to know that a wild and raw type is far superior to commercial varieties of honey that undergo heat and if bees have been fed extra sugars. Did you know, the average American consumes more than 150 pounds of refined sugar, plus an additional 62 pounds of high fructose corn syrup every year?  Switch out your refined sugar intake and use pure raw honey instead; the health benefits can be remarkable.

3 eggs⁣
3 Tbsp Canadian Wild Prairie Honey
2 Tbsp coconut milk, canned⁣
2 Tbsp coconut oil, melted⁣
1/4 tsp vanilla extract⁣
1/4 tsp salt⁣
1/4 tsp baking powder⁣
1/4 C coconut flour⁣

Mix all wet ingredients. Sift together dry ingredients. Combine both. Bake 14-16 min in a 400° oven. Makes 6 muffins.⁣
