The Mediterranean Keto Dietary Approach

What is the "Keto Diet"?

The "Keto Diet" is successful in ensuring one enters ‘ketosis’; however it traditionally consists of too much protein, high amounts of inflammatory fat, insufficient fiber for gut health, and low quantities of health-promoting phytonutrients found in plant foods.
 
Who Should Consider the Mediterranean Keto Plan?
 
This approach may be a suitable therapeutic diet for those with mood disorders, neurodegenerative disease, and pre-diabetes.

Your genes will indicate whether you are predisposed to the above and whether you should the ‘Med Keto’ as a preventative tool.

Remember, it is always advisable to discuss your dietary and lifestyle changes with your health care practitioner, especially if you have any medical concerns.

Keto-Friendly Recipe:
Almond Blueberry Muffins
Ingredients
- 2 eggs
- 1 cup fresh blueberries (or defrosted berries)
- 1/4 cup Flaxseed Meal (ground flaxseed powder – sometimes called linseed)
- 1/2 cup almond slices (chop up some raw almonds)
- 1 tbsp almond butter (optional)
- 1/2 cup unsweetened almond milk
- 1 cup almond flour
- 1 tbsp baking powder
- 2 tbsp butter (melted)
- 1 tbsp olive oil
- 1/3 cup Erythritol or stevia (increase to ½ cup if wanting sweeter muffins)
- 1 tsp vanilla extract
Instructions
1. While preheating the oven to 180 degrees Celsius, beat 2 eggs and Erythritol (or
stevia) in a mixing bowl for around 5 minutes until the mixture becomes light and
airy.
2. Put the baking powder, almond flour, almond butter, almond milk, and the flaxseed
meal in the egg mixture. Then pour the melted butter, the vanilla extract, and the
olive oil. Stir the ingredients together.
3. Gently drop the shaved almonds and fresh blueberries into the mixture and fold.
4. Prepare a muffin or cupcake cooking pan and transfer the batter into it. Top with
additional shaved almonds.
5. Bake for around 17 minutes or wait until the muffins are cooked thoroughly.
6. Remove from the oven and enjoy.
Recipe Of The Month
Baby Mushroom Crust Pizza with Beetroot, Hummus Spread
Baby Mushroom Crust Pizza w/ Beetroot, Hummus Spread
FOR THE BABY MARROW CRUST
- 3 Large Baby Marrow Crusts
- 1/4 tsp Salt
- 1/2 cup Gluten-free Oat Flour
- 1/2 cup Parmesan Cheese
- 2 tsp Pizza Seasoning
- 2 Eggs


FOR THE BEETROOT HUMMUS 
- 1 Medium Red Beetroot, roasted or boiled
- 1 x 400g Tin Chickpeas, drained and rinsed
- Juice of 1 Lemon
- 2-3 Tbsp Olive Oil
- 1/4 tsp Garlic Powder 
METHOD
  1. Grate the baby marrows into a strainer over a plate or in the sink.
  2. Sprinkle the salt over the top. Let them sit for 30 minutes.
  3. Put the baby arrows into the cheesecloth or in a tea towel and squeeze to get rid of any leftover water. Get them as dry as possible.
  4. Preheat the oven to 230 degrees (C).
  5. In a bowl, mix the oat flour, Parmesan cheese, and pizza seasoning with the baby marrows.
  6. Push the dough to one side of the bowl. Add the eggs on the other side and light whist them.
  7. Combine the whisked eggs with the baby marrow dough.
  8. Line the pizza pan with parchment paper.
  9. Scoop your dough onto the paper and spread it out, using your fingers.
  10. Pinch the edges a little bit to give it a crust shape.
  11. Bake for 12-15 minutes or until the pizza is lightly browned on top.
  12. Add all beetroot hummus ingredients to a blender.
  13. Blend on high until smooth and creamy. if the hummus is too thick, add a little bit more water or oil.
  14. Spread the beetroot hummus on top of the baby marrow crust.
