Greetings from Aillio

We are writing you from the 2022 Specialty Coffee Expo in Boston!  But first things first...

The AiO early purchase list

Before the SCA Expo began here on Friday, we wrote to everyone who signed up for AiO updates that we would begin taking deposits to reserve an AiO.

The deposit to get on the early purchase list is US$1000. Visit this link to share some basic information about you, your company, and your roasting needs and expectations. After completing the form, you will be able to pay.

Please keep in mind that we don't have a solid ETA yet. The most optimistic projections will see the very first retail units available before the end of 2022, but things won't really get rolling until 2023. Plan accordingly.

By the skin of our teeth

The expo itself got off to a rough start. We arrived in Massachusetts to discover that our booth's floor shipment was delayed indefinitely for unknown reasons, and even more ridiculously, the truck shipping the rest of our booth broke down on the road.

An emergency run to Home Depot seemed to be our only remaining option. (Think: "Minimal Industrial Hipster-Chic.") But fate smiled down upon us and everything arrived the morning before the show began. One very busy day later and, voila: We had a booth!

The AiO stole the show

The AiO casts a spell on people. Some attendees had been eagerly anticipating their chance to meet the machine in person for some time, while others were pulled into our booth out of simple curiosity: "What is that?"

Their overwhelmingly positive reaction speaks volumes about how open people now are to re-thinking their coffee business. Everyone wants more control, more variety, and more flavor for less money. The shift toward in-house roasting is inevitable at this point. We're just providing the technology to make it happen.

The Bullet turned some heads as well...

It's always a pleasure to show the Bullet off to people who have never seen it in person before, and many attendees told us that being guided through their very first roast on it was the highlight of the event for them.

But it was also a lot of fun for us to meet up with old-school Bullet owners -- including some very helpful regulars on the online forums. Thanks for the kind words, guys.

Also cool: the number of coffee roasting professionals we met who were already using the Bullet as a sample/lab roaster at their roasteries, in their schools and also in their homes as a personal-use roaster.

(Yes. It seems that many professional coffee roasters, after a long hard day of coffee roasting at the office, head home to relax and... roast more coffee. Who are we to judge?)

And... See you in Milan

The team with Tom from Sweet Maria's.
We have to say that after two long years of continuous expo cancellations, it's been great to once again be able to meet and interact with so many engaging coffee people from all over the globe. That human touch has been missed, and we're already looking forward to the World of Coffee in Milan in June.

That's all for now. Keep drinking great coffee, everyone.
