Greetings from Aillio

Before we share our experience at this year's World of Coffee in Milan, let us set the stage with a little story.

The last place we'd expect...

Near Milan, nestled in the Italian alps along the Swiss border and featuring some truly epic cycling trails, the little town of Livigno seemed the perfect place for Jonas (inventor of the Bullet, in case you didn't know) to kill a little stress before the inevitable madness of the expo ahead.

Italy is the birthplace of espresso -- thanks! -- but cafes there are traditionally thought of as pit stops on the way to somewhere else. Italian coffee preferences generally reflect that attitude: lots of oily robusta, drunk quickly. (Nothing wrong with that... but needless to say, there aren't many Bullets in Italy.)

So Jonas was a little surprised to discover that this little Italian resort town had its own specialty coffee micro-roastery and cafe, Kafe Livigno. He hopped on his bike and went to check it out.

The coffee was excellent. But the conversation that followed brought him a shock. After complimenting the barista on a fine cup, the two began discussing the state of specialty coffee in Italy, which she believed was just beginning to take off.

Jonas then revealed that he also worked in coffee.

"What company do you work for?'
"I work for a company called Aillio."
"Oh my god," she laughed. "Aillio!? We have an Aillio! It's right here!"
 
What are the odds? #roastingeverywhere indeed!

World of Coffee in Milan

After arriving in Milan, we discovered that the odds were probably a little better than we had imagined. The first major SCA conference in Europe in what felt like forever really opened our eyes to how specialty coffee is expanding its reach, even into one of the most staunchly traditional coffee markets in the world. 

The AiO was there, roasting live, and its design and our plans for it immediately resonated with local business owners. Meanwhile, next door, the Bullet pulled its own crowds, showcasing its power, versatility, and ease of use to many who had never heard of us before. Fun!

Just goes to show how quickly things can change. 

We really want to thank all the people from all over the world, old friends and new, who came to our booth. It was a pleasure to meet you and we can't wait to see you again.

The AiO's Development

Seeing the reactions to the AiO roasting was a highlight of the expo for us, and apparently for others as well. Work continues, and while we don't have a concrete timeline for the roll-out, momentum is building.
