As a child growing up on a farm, many hours were spent sitting amongst planted rows or under fruit trees munching on whatever was growing nearby while my parents planted the season’s crops. I would wait and watch the growing progress eagerly with them, hoping for an abundant crop, but for me it was knowing that soon every meal would include my favourite fruit or vegetable until the crop ended and another favourite appeared. Zesty_Mango_LeatherMangoes are a seasonal fruit that we'd all love to preserve and enjoy all year round! For something different blender your mangoes to a puree and add any other flavours you enjoy with mango and make a fruit leather out of it! The kids will drool over it and it is a fantastic and healthy alternative to fruit roll ups!
Skin and slice each cheek and sides off your desired amount of fresh mango. Place into a blender and blend until smooth or your preferred consistency. Use baking paper, Teflex sheets or Silicone sheets to line your dehydrator trays and set on 135 degrees Fahrenheit or 57 degrees Celsius for 6-8 hours or until leathery.

Zesty_OnionBattered Onion Rings will be a crowd pleaser in your household and for your entertainment parties. Use them as dish toppers, appetisers or enjoy them on their own as a healthy alternative to packet chips.

Cashew Cheese Batter: Put 2 cups of raw cashews (soaked for 2 hours), 3-4 tablespoons of lemon juice and salt to taste in a high powered blender and blend until smooth. You may need to add a little water to get things moving. Remove the cashew cheese from your blender as it will start to thicken on standing.
Peel and slice your onions approximately 5mm thick and push the slices apart so you get rings. Carefully coat the onion rings in the cashew cheese and place them on a non stick sheet on a dehydrator tray. Dehydrate at 105-115 degrees Fahrenheit or 41-46 degrees Celsius overnight for around 24 hours or until preferred texture.
 
Zesty_Papaya_PepperDon't throw your Papaya seeds out!... Dehydrate them as a fantastic substitute for pepper! I had to try it to believe it, and I am telling you... Papaya seeds taste just like pepper! This is just another clever way to make the absolute most out of your produce!
 
Remove, clean and soak seeds overnight for around 7-8 hours. Dehydrate at 105 degrees Fahrenheit or 41 degrees Celsius for roughly 8-10 hours or until crisp and they break apart when crushed. Simply add them to a mill or a grinder such as our Kuhn Rikon Ceramic Spice Grinder.

I am often asked questions about home gardens such as “Why do my plants grow so slow?” or “Why are the leaves on my plants pale instead of dark green” and the answer nearly always relates to soil health or an imbalance of soil nutrients and microbiology. Unhealthy plants are more inviting to insects and pests which creates problems and leads to less likelihood of a successful harvest. Adding fertiliser helps restore the nutrient balance but needs a good understanding of soil chemistry to correct. The ideal solution is to create a permanent soil environment with microbiology that creates its own organic fertiliser and retains moisture. As plants absorb the nutrients and moisture from the soil, the microbes are busy adding more.
