          After years of helping customers, we bid a fond farewell to our friend and associate Mike Cole. He will be missed and remembered by many. After being diagnosed with celiac disease almost two years ago, it became difficult for Mike to work around the Grain/Malt dust that is a large part of this business. Even with the proper safety gear to reduce the effects, it made more sense to leave the business and find a new opportunity elsewhere. We all wish Mike success in his future endeavors. We still have an amazing staff on hand with Josh Pierce, Jose Quinones, Shad Dirks and most recently Scott Kolbe joining us. Let's not forget our second longest staff member Arianne Clark, since May of 2014, who helps on Saturdays. I'm sure we could add up all the hours of experience our entire crew shares with you daily, it's probably in the "MILLIONS", and we are certainly much too modest to calculate such a massive amount.

Hefeweizen

Medium-bodied, refreshing, & tolerant of high fermentation temperatures, weizen is a fantastic summer brew. Our Hefeweizen is 100% traditional, cloudy, tart, a bit sour, with a phenolic and banana-clove character imparted by the yeast. To serve authentically, “mit hefe” (with yeast), pour almost all the beer into a tall glass, swirl the bottle, and add the rest.

Tips and Tricks:

a) Keep the milled grains loose inside the mesh bag to extract the most flavor and color

b) Pay careful attention to not let your steeping water exceed 170°F which extracts tannins and stops the enzymes from extracting the sugars from the grain.

c) Make sure that the malt extract does not accumulate and caramelize on the bottom of the kettle. Keep it stirred.

d) Hops can cause malignant hyperthermia when consumed by dogs, with sometimes fatal results. Don’t let Spot eat your hops.

Classes Available
 
Classes will now be offered by scheduling a session with our staff.  You are now be able to ask for a class to match your needs and interest. Range of topics will go beyond the standard, Beginner, Mash or All Grain offerings. Feel free to discuss what you feel you would like us to cover. We will then plan a personalized session, and schedule the class. These can be arranged for one on one, or a group.

PROGRESS ??, Perhaps.
 

       We now have a plumbing contractor lined up to handle our needs, including trench drains, floor sinks, tankless hot water heaters and running the lines to connect it all together. Also found a concrete contractor to cut the 6" concrete floors and refinish when the drains are set. They started cutting Friday the 7th and will finish up Monday. The plumbers are scheduled to start Wednesday the 12th. Once we get the floors refinished and the concrete has cured enough, we will be able to proceed with setting the Brewing system in place and start assembling all the components. It's possible that we may see a glimmer of light somewhere in this long dark tunnel of fun. Who knows, we might be able to announce an opening date someday. I'll hold my breath and cross my fingers, eyes and toes for this to happen sooner than later.
       My wife and I will head out to the HBC (Home Brew Con) the 26th, flying into Boston, then driving to Providence, RI. Truly excited to visit this historical and beautiful area of our country. Looking forward to enjoying some great beers and visiting some amazing sites. It's even possible the I may remember to post a picture or two of my travels.
